I hate the annoying shutter sound (mobile phones are not mechanical cameras so why have a stupid sound?!), but every phone manufacturer now ensure that you can't have a silent photo taken. This is to prevent perverts pretending to be on a call or typing a text message while taking secret unconsented shots. There are complex ways to access the phone's firmware and replace the camera sound with a silent sound, but that requires fancy gadgets. The only cheap and simple workaround that I know of is an application called C-cam. This application suits all Nokia Symbion series 60 handsets. I'm not sure what firmware the 3120 works on, but if it's a series 60, the C-cam might be a solution for you. If a silent camera function is really important to you, you'll just have to settle for an older phone unfortunately.
