How did emmet Cullen die?

In short terms: Carlisle killed Emmet.

In long terms: Emmet Cullen was hiking in the woods when he was attacked by a grizzly bear. When he was attacked, he lay there bleeding to death. It just so happened that Rosalie Hale (Cullen) was hunting in the woods where Emmet got attacked, and she smelled his blood. She was moving in for the kill until she saw him and she instantly fell in love. She said that he reminded her of the baby her best friend had when she was still alive, and his black hair reminded her of the baby's black curls. Rosalie then picked Emmet up and carried him to Carlisle, who turned him into a vampire. So technically, when Carlisle bit Emmet, he killed him. Emmet would have died from the bear attack had Carlisle not bitten him and turned him into a vampire. Carlisle only killed his human form and turned him into a vampire when he saw that he was dying and that Rosalie was in love with him. Emmet went on to live with the Cullen family and practice the careful art of "vegetarianism".
