Many symbols have easy keyboard shortcuts.

For example:

For others, if you can't use an HTML code or a unicode, you need to use the character viewer to select and insert the character. Once you enable the character viewer, it is available for display in most applications. To enable the character viewer:

• Choose Apple menu > System Preferences, click Language & Text, and then click Input Sources.

Open the Input Sources pane of Language & Text preferences

• Select the Keyboard & Character Viewer checkbox.

  Then, in any application, you can show the character viewer by choosing "Special Characters…" from the Edit menu, or type Command-Option-T. Here, you can select a lot of fun characters:

So, if you show the keyboard viewer and then hold down the Option key, you can see every character that you can type by holding down Option when you type that letter. This, of course, works with combinations of keys, such as holding down Shift+Option.
