First find the water inlet pipe, normally the one closest to the ground. Before it enters the water heater there should be a valve with a round head or cross head, turn that clockwise till it stops.
Ensure that you aren't turning off the gas supply if your hot water heater is gas fired.
your hot water heater will retain a little pressure in it, so you will need to turn a tap on to relieve the pressure.
From the heater.
Above the hot water (outlet side of the tank) there should be a valve such as a ball / gate and in some rare cases a globe. If the installer was not a professional then you may have to shut the in let valve located on the cold water side of the tank
Turn off the valve and this will cut off the H/W supply to the building.
