It is certainly possible for text messages to be delayed. If the network is busy, texts simply 'line up' in the system waiting to be sent. It is possible that the delay could make the text to be sent the day after it was composed !
Some do not text at all most days, only doing it when absolutely necessary, while others can go through their quota of 2000 texts in less than a week (sometimes in just two days). The average would probably be 30-50 texts a day in those countries where texting/cellphones are commonly available.

All I can think is that he has limited text messaging on his phone and exceeded that. If you answered his messages only, it is his problem. However, he did apologize, so hang out but not on the phone!
You can go to the service company that you're with (AT&T, Verizon, etc.) and ask to see received and sent text messages. You may also check data usage, they can tell you what websites you were on and at what time on what day.
