There are multiple way to wire in a network. Most common type in a small office or home would be cat5E Cable. Most practical and cost efficient. Now if you have a larger office building and need to interconnect floors, you would use fiber wire. There has been some alternate runs using RG6 etc. However at the end of the day you would need to look at your design, the distance, what speeds and amount of data that you are going to push on the network (video, Voip etc)
Once you have all the basic information, that would be your road map on designing and implementing your network.
