The "GB" stands for "gigabytes". These numbers (4, 8, 16, 32) simply state the number of gigabytes on the iPhone's hard drive (ie., how much data can be saved onto them). iPhones with higher storage capacities do not do anything differently than those with lower storage capacities.

In other words, an iPhone with 8GB of storage is just like an iPhone with 16GB or 32GB. The only difference is how much data can be saved onto their hard drive (music, pictures, video, etc.).

Note: Remember that these storage labels (like 16GB) are not the names of the iPhone's model. When you say "iPhone 16GB", you are referring to the original iPhone. There is also an iPhone 3G, iPhone 3GS, and the newest iPhone 4 - all of which can be found with "16GB" of space available on them.
