I paid my helpers $25 per hr and I have a journeyman I paid $1,200 PER DAY but this is the exception as these guys were highly skilled and even at these rates it left plenty of room for me to turn a profit

I'd say it's about 50/50. Some plumbers will, and some won't. It's understandable, because it is a waste of time to come out and give a quote and not earn your business.... but go for a company that's willing.
