Pilot Light Thermocouple:

Attached to the water heater should be a 'small metal box' with a temperature dial on it. Coming out of this small metal box should be a very thin copper (very dark copper) "wire" and on the end of that wire will be a 'bulb' of copper (Normally it is long and thin, but thicker than the wire itself). This "wire" is actually a hollow copper tube (so don't bend it excessively) that is the "Thermocouple" for the "Pilot light." Main Thermocouple:

On the back of this metal box is the 'main' thermocouple, this thermocouple is not a service item as it is a 'part' of the heating control unit (electric or gas) and the whole unit must be replaced. Tampering with, attempting to repair, or even investigating this unit can lead to electrocution (in case of electric water heater) or gas explosions (in case of gas water heaters) - IE: DEATH. It is STRONGLY suggested that you not attempt a repair of this yourself - call a friend that knows what they are doing, or hire a professional.
