Typical allowed exposure time is 30-60 days, depending on the manufacturer's instructions. Some particular brands allow for longer exposure, but these are very rare and extremely expensive.
Under normal conditions, if the concrete is yet to be poured but the pipe is in place, use any possible means to cover the PEX. Cardboard, sheetrock, plywood (with no screws in it of course), insulation leftovers, etc.
