You shouldn't write boring stories! You will not write well if you are boring yourself - the readers would be even more bored than you are. If you are writing something and you do get bored, that's your brain telling you that you need to change things up and make it more interesting. Go back and figure out where the story starts getting boring, and think of ways to change that bit. Maybe the wrong character is the lead, or the situation is not logical, or the dialogue is wrong. If you mean that you always begin a story and then lose interest - that probably means that you're not a writer. As author R.A. Salvatore puts it, "If you can quit, do it! If you can't quit, then you're a writer."
