After doing some research for your answer i came across no capacity limit number for Disney World Parks... Disney apparently does not release that type of information, only whether the park has reached the 1-4 capacity stages. Stage one is where guests that have not purchased tickets yet and are not staying at a Disney hotel will be turned away. Stage two is where the admission is narrowed down to resort guests, annual and premium passholders, or park transfers. Stage three is where only passholders and resort guest will be admitted. And finally stage four is where the park has reached capacity and will be closed to any new guests.

Yes, the theme parks at Walt Disney World will close when they have reached maximum capacity. When the parking lot is over 75% full, they will restrict admission only to annual passholders and hotel guests. Once the park reaches capacity, they do not allow any new guests to enter. This can (and often does) happen during the busiest days, including Spring Break, Fourth of July, and Christmas.
