people affect it mainly by polluting
We don't, the Grand Canyon was carved out of the rock over thousands of years by a stream, and today is a national park and landmark. The destruction of parkland is a federal offense. Granted, white-water rafting, campers, tourists and pollution in the water all have their effect.

The white-water rafting, campers and other tourist pollution all cause the Grand Canyon to dig deeper, fast. However, their effects are negligible and unnoticeable unless measured over a very long period of time.
