The aquatic plant communities in rivers and streams are made up of algae, mosses, and submerged plants with leaves. Before European settlement, most waterways were very shady because of the native forest surrounding them and supported a range of native aquatic plant species. Now most of our streams and rivers are in developed catchments and are dominated by introduced plants such as the oxygen weed, Egeria.

These introduced plants can provide instream cover for other plants and animals, but when stream flows are low during summer they can reduce the dissolved oxygen in lowland agricultural streams.

Cattails; everybody recognizes and you can eat just about the whole thing. You can crush the root in water to collect starch (or just throw in the fire and eat the caramelized center). The inner core of the base (white part) is edible and actually tastes pretty good. the cattail itself when green can be boiled and eaten like corn on the cob and finally the yellow pollen that develops above the cattail can be collected and used as flour.

Stinging nettle; If your not sure if its the right plant touch it for a positive identification. This stuff is actually really good for you just cut the tops of the plant of and boil for 10 to 15 minutes to stop the stinging element. Netter is really good for you and has a OK taste that's kind of along the lines of chamomile. the tea is actually pleasant with a little sugar. The nettle itself though gets a gross Okra like texture (or maybe you like okra)

Watercress: The leaves of this taste like a mild radish.

Wild grapes: The grapes of course can be eaten, but you can also blanch the leave for Greek style tortillas.

There will no doubt be more, but these are the ones that seem to be everywhere. REMEMBER WATER PLANTS COLLECT TOXINS FROM THE WATER! BOIL THE HELL OUT OF EVERYTHING!
