Until 1852, Kangchenjunga was assumed to be the highest mountain in the world, but calculations based on various readings and measurements made by the Great Trigonometric Survey of India in 1849 came to the conclusion that Mount Everest, known as Peak XV at the time, was the highest.
The highest mountain before Mount Everest is Kangchenjunga, located in the Himalayas on the border of Nepal and India. Kangchenjunga has an elevation of 8,586 meters (28,169 feet) and is the third highest peak in the world.

Mount Everest was the highest mountain regardless of whether it was discovered or not. Due to tectonic movements, Mount Everest was growing since the dawn of humanity some 2-4 million years ago. Before that it is possible that Everest wasn't the highest mountain, but since there aren't any records stating height of mountains, then we could technically say that Everest has always been the highest mountain regardless of whether humans or their descendants named a higher mountain.

mont Everest is always been the highest mountain
Mount Everest was officially discovered to be the highest mountain in the world on June 8, 1856 by British surveyors. The mountain had likely been known to locals and climbers before this official confirmation.
It was still Mount Everest. Mount Everest is in Asia, in the Old World, and so was not recently discovered by Europeans.
