The same kind of fibers that keep you the warmest anywhere else in the world! Wool and fleece are excellent materials because they keep you warm even when wet. Cotton is a bad choice because it dries very slowly, and does not retain heat when wet. Various synthetics (like polypro) are also good options. If you have to ask about fibers to keep you warm on Mt. Everest, I certainly hope you aren't considering climbing it in the near future. You have a lot to learn.
