In classical mythology, a one-eyed giant is called a "cyclops". Polyphemous is a particularly famous cyclops from whom Odysseus is forced to escape.
Polyphemus is a Cyclops, a one eyed giant. He was stabbed in the eye by Odysseus the Greek hero. He is a son of Poseidon.
Odysseus is able to escape the cave by blinding Polyphemus' one eye. It would be hard to blind a two-eyed giant.

No. There was supposedly a one-eyed elephant skull found before, but that was not exactly the same thing. In mythology, a cyclops was human (giant), I believe
