It is due to the fact that the valley is so low compared to the surrounding cliffs. All you have to have is a flowing water source that runs off of the cliff into the valley to have a waterfall that is thousands of feet high. Also, Yosemite has snow melt and rainfall that provides the water for the waterfalls which can be seasonal if there is a bad year of drought.
