How do you use the knife in stick RPG?

If you're talking about the "japanese swords" you just have to fight someone, then click on it's thumbnail at the bottom, then hold the mouse to use it automatically.

Buy the knife from the pawn shop for $100 (purple building at the bottom right of middle road)

When you get in a fight e.g. Bar Fight; you will deal an extra 2 damage then what you would have. e.g. if you would hit a "1" then you would hit a "3"

The knife in Stick Man RPG is used to get into a bar fight. You will take off +2 more damage on your attack.
