How do windmills in Holland work?

In the past they were also used to saw wood, make bread, make oils and probably some other things as well.

The old ones where used to pump water, Holland Made just about 20 % of the land by making dykes and pumping away the water. parts of Holland are below sea level. also they where used to drive all kind of machines (before the steam engine) sawing timber, making planks, to make ships. all around 1600/1700 grinding corn and weeds to make flour.
