As of 2009 there are roughly 8 million sheep. The sheep farming industry has become very unstable in the last ten years and as such, that number is likely to fall further.

According to IrishFarming.ie in Jan 2008:
Bord Bia estimates that this year sheep throughput will fall by 150,000 head or 4pc to around 2.8m head nationally.

The presumably that means that they were expecting 2.8 million lambs to be born in the Irish Republic in 2008.

Clearly there is a big change in the sheep population each year between December ( before lambing ) and April when the new lambs are born.
