Lutefisk(lye fish) which is traditional fish made from stockfish and soda lye. Pinnekjøtt is a main course dinner dish made of lamb. Smalahove is a dish made from a sheeps head. The skin and fleece of the head is torched, the brain removed and the head saltet, sometimes smoked, and dried. all these dishes are usual to eat for Christmas and they all have long traditions. My personal favorite is Lutefisk. I have not tasted Smalahove, but i think it would represent Norway in a good way.
