"Central Americans" is a general term for anyone from Central America. If you want to get specific than you would say "Nicaraguans" if you're speaking in English or "Nicaragüenses" if you're speaking in Spanish.

If you meet a group of friends at a bar who happen to be from Costa Rica, Nicaragua and Panam and you ask where they're from they might just say they are "Central American" to sum it up. If you get to know one person specifically and ask where they're from they might say "Nicaraguan".

So either "Central American" or "Nicaraguan" is fine.
