The "best books about China" is a question as broad as China itself. There are numerous sub-genres within the "China" genre of literature. Here are what are generally considered the most "popular" books of each sub-genre, as "best" is a relative term according to one's personal opinion. You also have to consider that books written about China for westeners (i.e. in English) are not as widely read amongst the Chinese, nor are books written in Chinese commonly published in the west. This list will focus primarily on books readily accessible to westerners:

Ancient China: Dream of Red Chamber (aka Red Mansions) by Cao Xueqin

Modern China: Mao: the Unknown Story by Jung Chang

Cultural Revolution: Life and Death in Shanghai by Nien Cheng

Rural China: The Good Earth by Pearl Buck

Historical Fiction: Tai Pan by James Clavell

Chinese-American: Joy Luck Club by Amy Tan

Illustrated/Coffee Table books: CHINA: Portrait of a People by Tom Carter

Expat Memoir: River Town by Peter Hessler

Travelogue: Riding the Iron Rooster: Paul Theroux

Sex/Bad-Girl: Shanghai Baby by Wei Hui

Chinese Cooking: Serve the People by Jen Lin-Liu

China Adoption: Silent Tears by Kay Bratt

Business Dealings: One Billion Customers by James McGregor

Guide Book: China Survival Guide by Larry Herzberg
