Wisconsin is a big state, with a variety of ethnic and cultural populations, so there are no "Wisconsin people"-- there are a wide range of different tastes and different preferences. For example, Madison has a number of health food restaurants and as a college town, it also has a lot of bakeries, sandwich and fast-food places that students love, and some really classy restaurants that serve French or Italian or Greek food.

Wisconsin is in close proximity to Lake Superior, so seafood is quite popular. And the state is also known for its dairy farms: you will find excellent dairy products throughout the state. Milwaukee has a number of good German restaurants. Green Bay is a meat-and-potatoes kind of place, although there too, you can find classy restaurants serving a nice variety. So, it depends on what part of the state you visit and which ethnic cuisines are popular in a particular city. I would suggest that you choose a city (like Milwaukee, Green Bay, Madison, etc) and research the most popular restaurants there. That will help you decide what kinds of food, and what dishes, are most frequently eaten.
