Don't diss it until you've tried it. :P But I think you may be misunderstanding it. In England, what Americans call chips are called crisps. The thing we have with fish? That's what Americans call fries. So having "Fish and Chips" is a bit like having Steak and Fries. But with fish.
I think you mean elision - where a sound or word is ommited in speech to make it easier to say. For example "fish and chips" becomes "fish 'n' chips, "dunno" for "don't know", "wanna" for "want to" "I'd" for "I had". The pronunciation of some words lose syllables - "camera" is more like "camra", "chocolate" is more like "choc-late" etc.

Chips are friend in very hot oil to make them crisp. Oil is not that good for you. The fish gets dunked into the batter then deep fried in oil just like the chips. Again the oil isn't good for you. But there is some omega 3 in the fish which is good for your brain. Hope this helps.
