Colorado produces a cornucopia of produce. There is such a variety that everyone has a personal favorite. The Rocky Ford cantaloupe certainly has a major following as does the Pallisade peach, and the Penrose apple. Colorado Lamb gained favor when the sugar beet was Colorado's major agricultural product. Lambs were fattened on the beet tops and sugar beet pulp which were formerly discarded. It was a vast improvement to range fed lamb and it became a branded product that fine restaurants around the world favored. Today beef is the big seller and Colorado is a major beef production center.
