Myths and Legends originated were initially created to answer questions humans couldnot, mainly natural phenomenon like rain or storm. Not just in Greek mythoogy but in Egyptian myths, hundu religions etc all have Gods explainig these natural processes, like Ra-the sun god or Indra.Hermes was a god of messengers and at that time people carried messages on foot or rode horses, these messengers were very common in ancient Greece so my theory is that they created the Hermes so that these messengers would feel safe and secure traversing long distances delivering messages believing that there was a god looking after them(why is he a god of thieves is beyond me.)
