Actually both lamb and sheep meat are consumed, although they are prepared differently. Lamb is more traditional in the spring, as it was originally used as a sacrifice to the gods (then later G-d in Jewish religious ceremonies) around the vernal equinox. Also, lamb meat is more tender and has a less greasy texture than mutton (sheep meat).
