68H is optical laboratory specialist. With an MOS such as that, you would be working in an office/laboratory environment, really not much different than what your civilian counterparts would be doing. You can find a little more information by following the related link attached to this question.
The safest MOS in the Army would be one dealing with the Army Band, Human Resources, or finance. These include the MOS - 42F, 42R9B, 42 S, or 44C.

im a 63B currently in the active duty army, and its a great job, of course sometimes youll have to work late to get the mission done, if you dont like being a mechanic..then do NOT pick this mos because you will be working on wheeled vehicles alot, oh and this mos is changing to 91B
11B2V is the MOS for an Infantry, E5 Sergeant, Ranger .
Mail clerk is a supplemental duty - it doesn't carry its own MOS.
