Before shooting, the captain had to make several observations of his target through the periscope to estimate the range to his target, the targets course and speed etc. using the information obtained through observation he could then formulat a mathematical firing solution and shoot the torpedo in souvh a way that it would "meet" the target. It was a bit of a guessing game centered on shooting at a spot in the ocean where you reasonably expect your target to be a few minutes from now. Modern torpedoes are fired using similar methods but are equipped with sophisticated active and passive sonar sensors which will home in on the target ships noise however these torpedoes can be "fooled" by countermeasures which make noise to fool the passive sensors and create a large cloud if bubbles to fool the active sensors.
