The U.S. didn't start issuing dollar coins until 1794 so there are not many dates to choose from; however, most are quite valuable, with current prices beginning in four figures for well-worn coins and going up from there. Other countries also issued dollar-sized coins but their values are extremely variable. But before you plan that world cruise, two things to be very careful about: 1. There are millions of counterfeit dollar-size pieces on the market. A lot are made in the Far East and the quality ranges from laughably bad to almost undetectably good. Anything that looks really old needs to be authenticated by a dealer or reputable grading authority. 2. There is a dollar-sized piece called the Maria Theresa Thaler (sometimes written Taler) that has been issued as a bullion coin since the 18th century. ALL issues carry the date 1780 regardless of when they were struck. See http://www.theresia.name/en/ (among thousands of sites!) for some good information. Maria Theresa pieces are usually sold for their precious metal content, currently about $13 or $14, and are not considered rare.
