The two main lines were the Union Pacific (coming from Omaha, Nebraska) and the Western Pacific (coming from Sacramento, California).
The Western Pacific workers were mostly Chinese. How could those small, scrawny workers be able to build over 150 miles of railroad? If they could do the Great Wall of China, they could certainly build a railroad.
The Union Pacific workers were mostly American. It was easy for them because they had all their resources on the same continent, unlike the others who had to import from China.
