In "Red Dead Redemption," you can have both horses and cows at Beecher's Hope, which is John Marston's homestead. While horses can be freely ridden and kept in stables, cows can be herded and managed in the game, primarily for ranching activities. Players can engage in various activities related to livestock, enhancing the ranching experience. However, the game mechanics primarily focus on horses for transportation and gameplay progression.

you can capture them in the wild or buy them at the shop
You can only do this on the burning of the stables mission
No you can't directly sell your horse. However, you cansell its deed if you have it in your inventory.
