You can play Assassin's Creed III with an e5300. However, the performance will not be ideal at all. In fact, (No matter what you do) you will lag a lot in cities (less than 20 FPS on average) no matter your video card, or resolution. Other places though (Like in open field, or in houses) you won't see too much lag with the right settings.
