You cannot keep you own horse in the sense of feeding it and petting it etc. but you can constantly ride the horse of your choice.
Simply pick the horse you want and mount it.
From now on every time you tap "Triangle" to cal horse then that same horse will come.
(the "triangle" refers to the PS3 version". the same thing should apply for XBOX but with different controls.)
