He will give the fossil back, but when you go to your pockets it will now have an icon with a picture of bones on it, and if you hover over it you will see that it is no longer called "fossil", but instead it is called whatever specific type of fossil it is ("pachy torso" for example). You can then take it to nooks and sell it. Approximate values for fossils are $2000-$5000, although i believe higher and lower values are possible.
