There are two ways to fish.
- If Colin's mom has given you the Fishing Rod, press whatever button it is equipped to to take it out. Read the directions in the menu you use to equip things with to use the rod.You might want to get some bait for it, since fish like bait.
- Go to the Fishing Hole in the Upper Zora's River. Go in the building and pay to rent a boat. You can also play "Roll-a-Goal" near the door to win the Frog Lure.

Depends on what game console you're using. On the cube, you hold the grey joystick down and press A to reel it in (if you're talking about the fishing you do in the boat.) If you're talking about regular fishing with you're fishing rod, then you just pull the fish in with the yellow joystick.
I don't know about the Wii version, since I have never played that version before. Hopefully somebody with the knowledge of that will edit this and tell how.
You will need a bottle. If you have a bottle, go next to a fish, face it and swing your bottle. If you don't have a bottle you can get one by diving down in the lake Hylia (I don't remember the name exactly) but to get there you will need the stone thing you get from winning the diving game in zora's domain (it is on the left of the kings chamber). The stone lets you swim underwater longer. Hope all this helps :) lol

In case you mean Twilight Princess, the sinker lure is obtained by using the fishing rod in the fishing hole at the water outlet where lots of junk can be found. The lure makes it much easier to catch big fish, but cannot be used while fishing with a guide because the fishing hole doesn't permit the use of such lures.
