You can switch horses either by using the Object Menu to select another one from the deeds you own, or by roping a wild one.
You can also steal one, but be prepared for the posse that'll follow you.
Note that if you're trying to Platinum the game, to obtain the secret achievement/trophy "Spurred to Victory", you MUST complete 20 story missions without switching to a new horse at a hitching post in Single Player.
If you've already switched horses, you can still get the trophy (and others you missed) by replaying the first 20 missions again after you complete the story mode.

Bonnie, the first person you meet, after a while will tell you there is a stallion near Armadillo. She will give you the laso to catch the horse. You also get to keep the horse which is much faster and durable then the horses avaliable to your charecter.
