You can't.
To update Terraria on Xbox 360 to version 1.2 or the latest version, ensure your console is connected to the internet. The newest update might not have come out yet.Maybe what you have seen are snapshots. These are not the real update but just 'experiments'. They are available for download so you can try out the new features that are coming in the new update.
You'll have to go to the Minecraft site and click Download and re-download. The new update for 1.6.2 updates the launcher for Minecraft, making a new download required. So head onto their site and download it. It should automatically update after that.

If you already have 1.6.1 you just click yes to the new update and it will download the update. If you don't have it already just go to the Minecraft website and down load the launcher and it will update that way.

I don't see why you want to download it on a Kindle as it is not supported on that platform. However, you may transfer your terraria files/saves over to your kindle (depending on what device) over usb. Just plug the usb into your computer, transfer whatever terraria files you need, and the next time you need them do the same thing except grab them back. Hope I answered your question.
