You can't your probably thinking of the Iron Golem. He's not a Villager. But you can make him, you need 4 iron blocks and a pumpkin. you put 2 iron blocks pointing up and then 1 iron block on each side, then you put the pumpkin on top, and you have an iron golem to protect you!
