You have to mount it and ride it (break it) just like the cowboys do, it may take a few times to tame it. Don't forget to have a saddle in your inventory to ride it after your done and a lead to tie it up so it doesn't wander off later.
One way I've heard is to give the horse some apples and then mount it and it should reduce the times it bucks you off and you have to remount it.
