Impa, the Sage of Shadow; awakens as a Sage once Link defeats Bongo Bongo in the Shadow Temple.

Zelda, the Seventh Sage; provides the necessary power to defeat the King of Evil once Link defeats Ganon.

You could also count Kaepora Gaebora, the owl who helps Link along while he is young; he is supposed to be the reincarnation of a Sage.
