Yes, it was possible to see Nessie on the binocular telescope, but she wasn't there all the time. She appeared in the deep background for a short time several times a day, so that some players might see her and win a prize.
The prize for seeing Nessie on the Cryptids Island Preview was a Nessie hat.
In the demo for the island, players could look around through the viewfinder overlooking the Loch. Some would see a shadowy shape of Nessie, and win Cryptids costume items. (see related blog link)

You win at darts a second time and get a submarine ticket.
The Pub is to the right of the loch at Loch Ness. You will play darts there to win the tickets to the rowboat and submarine.
On your first visit to Loch Ness, you can win a rowboat ticket by playing darts at the Pub (to the right of the Loch).

There is no sure way to win the Yeti game. The game was badly interpreted. Move forward twice and try to get a hunter to make a wrong move, then go by him to the left.
When you catch Gretchen Grimlock's helicopter, jump onto it from yours, then click her gas cap and fuel will start coming out. Cut loose the line to Bigfoot's cage with your gardening shears, and you both float safely down on the cage's parachute.
After you get the camera, go to the pub.Play a game of darts to win a rowboat ticket.Use your rowboat ticket to go out into the water.Snap a picture of the humps in the water.
Prove 4 cryptids to qualify for the Mews million-dollar reward. You find a footprint that may be from the Yeti, but you can only prove Nessie, the Chupacabra, and the New Jersey Devil. Then you have to track Bigfoot and save him from Gretchen Grimlock. (see the related solution question)
There is no skillful way to win. The designer did not adapt the game correctly, and the hunters can always win. Move toward the hunters and then away, and wait for one to move too far, allowing you to slip by. This may take two or three games.
