Pomegranate (Sometimes appears in Classic Mode and you had to slice it several times as fast as you can)

Dragonfruit (It is a rare fruit and if you slice it, you'll get bonus)

Starfruit (Now in the game, if you slice it you'll get a certain amount of "Stars", these "Stars" can be used to unlock blades/backgrounds and more)

Also, in the Arcade Mode there's multi colored bannanas that give you certain bonuses.

I believe there will be more fruits featured in Fruit Ninja in the future. I might didn't catch any other fruits in this answer but I tried remember the best I could. (: Hope this helps you.

Yes. And slicing it awards an Open Feint achievement.

Also, it gives you 50 points!
