"Gibs" in a first-person shooter game generally refers to a target exploding when hit. For example, hitting a critical area, or with certain types of ammunition, might cause an enemy soldier or dinosaur or chicken or whatever to not simply die and fall to the ground, but to explode in a shower of blood and body parts. Said body parts are called "gibs" and causing this to happen is called "gibbing" (the words are probably related to "giblet").
