Actually, Wing Chun has Kum Na or Chin Na (Seize Control) techniques which do involve some stand-up and one knee up kneeling positions. Technically, Wing Chun has some "clinch type" techniques particularly the Man Geng Sau (Neck Pulling Hand). Many Sifu (Father Teacher) teach that what is true vertical also applies in the horizontal. Hence, grappling is not out of the question, but avoided over faster striking and mobility robbing low kicks. No system can cover everything, or major in all types of situations. I would say that it lacks any very well defined weapon defense methods particularly against a knife-wielding opponent.
