Grinding means that you continuously repeat a certain action in order to reap the rewards for it. It usually involves killing the same kind of monster over and over again, or acquiring a certain resource in large amounts.
Examples are:
Grinding honor - doing a lot of PvP for no other purpose than acquiring honor
Grinding rep - doing quests or killing creatures to increase your reputation with a faction
Grinding (Ore, Leather, Herbs) - Trying to get large amounts of a good
Grinding Exp - killing creatures hours on end to level up, with little or no questing.
Generally, grinding is considered not fun, but a necessary evil to get what you want at times. Compared to other MMO's, the amount of "grinding" is relatively low.
Good grinding targets for Paladins are generally demons or undead, since many abilities of the Holy tree focuses on dealing damage to them. Other then grinding, which is very boring and is not how WoW is played, your best choice is to do quests; they give excellent experience, not hard to do, and are actually fun!
Quests - look for non-player characters with a question mark over their heads - this means they want you to do something for them (kill Hogger, Get iron, deliver this package, finish this dungeon....) Just grinding on mobs (and not quests) is the slowest way to level in WoW.
