There are no Motorcycle parts in Dead Rising 2, You have to defeat Leon to get his bike.
Try to trap him against something to kill him easy.
Since Chuck is a Ex-Motorcross Champian, he can costomize the Motorcycle.

You can also add spraypaint to the bike but it only lasts until it breaks, same with mods.
