The left joystick on a ps2 controller serves two purposes, to act as a joystick and if you press the joystick in it is the L3 button.
You might need to use the L3 button in various Xbox 360 games. The L3 button is from clicking in the left stick.
If I am not mistaken, L3 is clicking down the left analog stick

Ummm well on the PS3 it's L3 which is the button that you click down on the left analog stick. Probably the same on the 360 (assuming it has that kinda button as I don't know I've never played an XBOX).
In the GameCube controller, there are no dedicated R3 or L3 buttons like those found on other controllers. if you are playing it on the ps3 press l2 r2 l3 r3 down all at the same time (l3 and r3 are the analog sticks) if you are playing it on the Xbox 360 press lt rt and the two analog sticks all at the same time while in the air and you will bail off your skateboard

It depends on what control scheme you have set but if you have it set to default you shake the wii remote forwards or sideways
